Cinco de Mayo Mocktails

When I think of Cinco de Mayo, I think lots of delicious chips and salsa, and of course, tacos and margaritas. Because I don’t drink alcoholic beverages, there are still a myriad of delicious and refreshing mocktail choices available. Below are some easy favorites of mine:

Virgin Margarita

Ingredients:

  • 1 can frozen lemonade

  • 1 can frozen limeade

  • 1/3 cup grapefruit juice

  • 1/3 cup orange juice

  • Lemon & Lime Wedges for garnish

  • salt mixed with Chile powder for the rim your glasses

Rub the rim of your glasses with a lemon or lime and dip into the salt and Chile powder mixture. If you don’t like the kick of the Chile powder, just use plain salt.

In a blender, mix a cup of ice (more or less depending on how slushy you like your drink) with all the ingredients (saving the lemon/lime wedges for the rim of your glasses and for garnishing the drinks). Blend until everything is thoroughly mixed together. Pour into salted glasses and garnish with wedges of lime or lemon. Enjoy!

I can’t remember where I found this recipe but it’s one of my favorite and a little indulgent because of the powdered sugar. Nevertheless, it’s very refreshing and perfect for any day - especially during the summer months.

Agua Fresca with Watermelon

Ingredients:

  • chop 3 to 4 cups of seedless watermelon into very small pieces

  • juice from a medium-sized lime

  • 1 tablespoon powdered sugar

  • Lime wedges for garnish

  • Sprigs of fresh mint for garnish

Puree watermelon pieces in a blender. Add the lime juice, sugar and a cup of ice (adjusting ice to personal preference). Blend everything until it is smooth. Pour into glasses and garnish with wedges and sprigs of mint. Enjoy!

Strawberry Pineapple Mojito

Ingredients:

  • 10 strawberries trimmed and cut into fourths

  • 6 chunks of pineapple (I use fresh pineapple but have used canned in the past)

  • 20 - 30 mint leaves (reserve some for garnish)

  • 1 medium lime, cut into wedges

  • ¼ cup simple syrup (simmer equal parts sugar and water until sugar is completely dissolved)

  • 1 cup pineapple juice

  • 1 cup Sprite

  • 10 frozen strawberries

  • Additional Sprite for topping off glasses

Divide strawberries, pineapple, mint leaves and lime evenly among four glasses. With the back of a wooden spoon, press the fruit and leaves until you have released the juice from them. Add a tablespoon of the simple syrup, a quarter cup of pineapple juice, and a quarter cup of Sprite to each glass. Stir together.

Add 2 to 3 frozen strawberries to each glass and top with more Sprite. Garnish with fresh limes wedges, slices of strawberries and a chunk of pineapple with a mint sprig or two. Enjoy!
