Easy Baked Oatmeal

During one of my visits to see my daughter while she attended school in Alabama, she took me to a little family-owned coffee/tea shop that served homemade menu items. I remember ordering their baked oatmeal for the first time worrying that it would be dry and bland. Upon my first mouthful of chewy, delicious baked oatmeal, I immediately fell in love. It was simply magnificent - especially for someone like me who dreads breakfast food. Give me a cup of coffee and that is breakfast enough for me.
Since that day, I vowed I would find the closest recipe to their baked oatmeal. After many attempts, I combined a little of all the different recipes I had tried to come up with my personally created favorite. I hope you love it as much as I do! Ingredients
Dry Ingredients:
3 Cups Quick Cooking Oats
3/4 Cup Sugar
2 Teaspoons Baking Powder
3/4 Teaspoon Salt
Wet Ingredients:
1 Cup Milk (whole milk preferred, but you can use whatever you have on hand)
1 Stick Butter, melted
2 Eggs, lightly beaten
2 Teaspoons Pure Vanilla Extract
Optional Toppings:
Crème Fraîche
Fresh Berries
Warm Maple Syrup
Assortment of nuts, dried fruit and brown sugar
Note: This baked oatmeal is sweet enough that you really don’t need to add any additional sweetness with brown sugar and/or maple syrup, but it just depends on your personal preference. I eat mine with a dash of maple syrup. So good!
Directions:
Preheat oven to 350℉ and prepare an 8x8 baking dish using cooking spray.
Combine sugar, baking powder and salt.
Melt butter then combine with milk, and vanilla to lower temperature of melted butter before adding the slightly beaten eggs and combining it all together. Add sugar, baking powder and salt. Combine.
Add quick-cooking oats to mixture and combine well. Pour and spread evenly into prepared baking dish. Bake for 25 minutes or until oatmeal is a golden color and edges are slightly brown. Spoon into individual dishes or bowls, add any toppings if desired, and enjoy!
Note: Instead of baking in one dish, you can pour mixture evenly among a few ramekins depending on their size and create single servings.
